So You Want a Custom Offset Smoker? Here's What Nobody Tells You

  Look, I've been around backyard cooks and pitmasters long enough to know one thing for sure  everybody says they want "the best" smoker, but almost nobody agrees on what that actually means. Some folks want a monster rig that can feed a whole church picnic. Others just want something solid enough to smoke a brisket on Saturday without babysitting the fire every twenty minutes. That's the whole point of going custom. You're not settling for whatever's sitting on a shelf at the big box store. A custom offset smoker isn't just a metal box with a firebox bolted to the side. Well, technically it is, but a good one is built around how you actually cook. And that's a totally different animal than what you'll find mass produced.
